Since I discovered this amazing soup, it became a must every winter. It’s so easy, tasty and special that it’s now a part of my cooking routine and a sort of “winter tradition” for every guest I have.

Red lentils cook relatively quickly and are a great source of protein and nutrients. They provide nutrients that improve your health and help with weight loss and maintaining it.

I always add different things for a change, but the chia seeds are definitely one the best ones I’ve ever tried!

 

Recipe (6 portions)

* 2 cups / 14 oz / 400 g red lentils

* 2 chopped garlic cloves

* 1 tablespoon turmeric*

* 1 large onion / ~ 2 cups, diced

* 2 teaspoons ground cumin*

* 1 cup chopped parsley

* Juice of half a lemon (or to taste)

* 1/2 cup chia seeds

* Salt & pepper to taste (Cayenne pepper gives it an amazing flavor)

** Cumin & turmeric are just suggestions, you can try with salt & pepper only.

 

Put the lentils in a pot with 8 cups / 1.6 L boiling water, the onion, turmeric, cumin and salt. Bring to a lower heat and cover for twenty minutes or so. Once the lentils are soft and falling apart, add the pepper and chia seeds.

Add more boiling water if the soup doesn’t have the consistency you like, then taste and add more salt if needed. Keep the soup warm/hot.

Once ready, take it off the heat and add the lemon juice.

Serve with chopped parsley on top.
