I used to work with an amazing 70 year old woman who lived in so many different countries, that each one of her stories would always be much more interesting than anything else I was doing at work.

We used to sit next to each other and I would always listen with open eyes and mouth wide open, to her stories and descriptions about how life was. She had such an amazing life all over the world!

Of course she also learned a lot of the “world’s cuisine”.
One of the countries she lived in was Iran, and that’s where she learned this amazing salad that has now become a part of my life:

 

– 1 pack or Parsley

– 1 pack of Coriander

– 1/3 pack of Mint

– Dried fruits of your choice (I love it with dried cranberries & sugar coated almonds)

– Juice of half lemon

– Juice of half orange

– Olive oil, salt & pepper

*Optional: Honey (For a sweeter taste)

Chop the coriander, parsley and nana and put it all together in a bowl with the dried fruits.
Season the salad with the lemon and orange juice, olive oil, salt and pepper.
You may add some honey for a sweeter taste.

 

This salad is amazing alone & to accompany any dish.
I made it for a friend and she became addicted, she started making it daily!
This salad is also extremely good for your body, because these veggies promote optimal health, are a rich source of antioxidants and folic acid, are rich in vitamins, encourage digestion, reduce blood pressure and many more.

I just love love love this salad!
